I currently have a 2017 Discovery Sport Base Model with about 77k miles on it. Regular maintenance is done on the car but for some reason sometimes when I coldstart start the car (happened 2 times in the past 3 days), it begins to shake pretty bad. I don't touch anything and the RPM's will jump up and down from 1500 down to like 700. To fix it, I have to shut off the car and restart it to make it run properly again. There are also no check engine lights or any codes thrown which is also very puzzling to me. I haven't really found other people with the same problem from googling and searching the forum so any help would be appreciated.

Check your spark plugs. Do you have scan tool? See if you have any recorded cylinder misfires, sometimes they occur but it doesn't trip check engine light. My other car had bad spark plugs at 50,000 mi (80,000 km) that caused occasional hesitation like this, but not as bad as you described.

Next I would check common items like air filter and fuel system.
