I just don't think that the Discovery Sport is going to be that spacious with all 7 seats in it. That's why they cal it a 5+2 seating. Basically you don't want to be back there unless you are a child or fairly petite.
They're Jump Seats, they will be suitable for adults in a quick jaunt out to dinner or similar trips. No way over long distances, but regardless you couldn't use the rear jump seats on a long distance trip considering there would be no room for luggage.
So can you remove those seats if you want to in order to provide more space for luggage when you are needing to transport more?

This is true. cargo space in the back with those 3rd row seats up is basically useless, just good for duffle bags
You can always tie your luggage (or some passengers) to the roof. :D
